Dad’s Saturday Morning Pancakes

Ingredients

1 1/2 cups all-purpose flour

3 1/2 tsp baking powder (1 TBL + ½ tsp)

1 tsp salt

1 Tbls sugar

1 large egg, lightly beaten

1 1/4.. cups milk

3 Tbls butter, melted

Directions

Heat griddle to 350 degrees. Whisk together flour, baking powder, salt, and sugar in a medium bowl. Add egg, milk, and 3 tablespoons butter; whisk to combine. Batter should be smooth but not whipped.

Melt 1-2 Tablespoons of butter on the griddle. Using a ¼ cup measuring cup pour pancake batter, in pools 2 inches away from one other. When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.

Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.
